Kathirikai Varuval – Eggplant Fry Recipe


Ingredients:

  • Brinjal (small) – 15
  • Oil  -2tbs
  • Mustard  -1tsp
  • Curry Leaves  - few
  • Asafoetida  - a pinch
  • Sambar Powder  - 1tbsp  (according to your taste)
  • Turmeric – 1 tsp
  • Salt required

 Preparation:  


  • Wash brinjal (eggplant) and cut them into small pieces. 
  • Heat the pan with oil, add mustard,     splutters add the   curry leaves, asafoetida and add brinjal saute a min and add sambar powder, turmeric and salt. Cook this in low flame for 20-30 min till it done, no need to sprinkle water. Stir it frequently so that the masala gets mixed equally. 
  • Kathirikai Varuval is ready to taste enjoy with sambar/rasam rice/ even goes well with chapathi.  Paleo brinjal fry
