Vazhaipoo Masala Vadai Recipe / Banana Flower Vada Recipe



Ingredients
  • Vazhaipoo - 1 cup chopped
  • Channa dal - 1/2 cup
  • Tur dal – ¼ cup 
  • Urad dal - 2 tbsp
  • Fried gram – 2 tsp
  • Raw rice - 2 tsp
  • Green and red chilli – 4
  • Fennel seeds - 1 tsp
  • Jeera – 1tsp
  • Onion - 2 chopped
  • Asafoetida - 1 tsp
  • Coriander leaves
  • Curry leaves
  • Salt to taste
  • Oil - For deep frying
Preparation


  • Soak dals, rice together for 2 - 3 hours. In a mixer grinder add chilli, jeera, fennel, fried gram, soaked mixture and grind coarsely (without adding water).  
  • Now add the chopped vazhaipoo and grind preferred consistency. Without adding water.
  • Transfer the mixture into the bowl and add the onion, salt, asafoetida, coriander, curry leaves and mix well.
  • Now heat the pan with oil, take small batter and use palm to make them flat.
  • Take small size batter and drop into the oil to check the heat, now drop the batter in oil and cook in medium flame. You can fry 4 at a time.
  • Deep-fry both sides until golden and until get cooked well.
  • Drain and serve the Vazhaipoo Masala Vadai / Banana Flower Vada Recipe 


If you feel the batter having excess water, add fried gram powder or rice flour and adjust the consistency. #snacks #recipes

Vendakka fry / Bhindi Coconut Stir Fry



Ingredients
  • Vendekka / Bhindi – ½ kg
  • Shallots/ small onion – 10 - 15 chopped
  • Coconut – 5 tbsp
  • Red chilli powder – 2 tsp
  • Coriander powder – ½ tsp
  • Turmeric powder - ¼ tsp
  • Garam masala – 1 tsp
  • Green / red chilli – 3 slit
  • Mustard seeds - 1 tsp
  • Channa – 1 tsp
  • Curry leaves few
  • Oil - 2 tbsp
  • Salt to taste
Preparation


  • Wash and dry the bhindi (ladies finger/okra) and cut it into small pieces and keep aside.
  • Heat the pan with oil, add mustard after split, add channa wait till golden color.
  • Now add the chilli and saute for a sec then add the onion and cook till colour change.
  • Add the lady's finger cover and cook in medium flame.
  • After 5 mins, add turmeric powder, chilli powder, coriander powder and salt, cook till it changes colour. Mix very carefully, otherwise it gets smashed (sticky).
  • Keep stirring until it gets crispy in low flame.  Finally add the coconut, garam masala and mix well. Wait for a min and turn off.

Sorakkai / Bottle gourd Curry Recipe


Ingredients
  • Sorakkai / Bottle gourd - 1 small   
  • Onion - 1 chopped
  • Mustard seeds – ½ tsp
  • Ginger - 1 inch
  • Garlic   - 3 -5
  • Tomato - 1 chopped
  • Green Chilies - 1 
  • Red Chilli Powder – 1 tsp
  • Turmeric Powder - 1/4 tsp
  • Coriander powder -2 tsp
  • Garam Masala - 1/2 tsp
  • Coriander leaves few
  • Coconut - 2 tbsp
  • Poppy Seeds - 1 tsp
  • Fennel seeds – 1tsp
  • Cumin Seeds - 1/2 tsp
  • Cashews – 2 (optional)
  • Salt to taste
  • Oil - 2 tsp

Preparation


  • Wash, peel and cut the bottle gourd into small pieces.
  • Heat the pan with oil and add mustard after split, add onion, chilli saute for few mins.
  • Now add the tomato and cook till mushy.
  • Add the bottle gourd, turmeric powder, chilli powder, coriander powder and garam masala mix well and add little water.
  • Cover and cook in medium flame till the bottle gourd is soft.
  • In a mixer grinder add the coconut, cashews, poppy seeds, cumin, fennel, ginger, garlic, grind like a fine paste.
  • Now add the grounded paste to the bottle gourd mixture and mix well.
  • Cover and cook in low flame for 3- 4 min.
  • Finally add coriander leaves.
  • Ready to serve Tasty and spicy bottle gourd curry with rice.
