Capsicum Egg Podimas


Ingredients:
  • Eggs – 3 
  • Big Onion – 1 chopped 
  • Capsicum – ½ chopped 
  • Sambar powder - 1/2 tsp
  • Oil/butter – 2tsp
  • Green chilli – 1 chopped
  • Cumin – 1 tsp
  • Curry leaves few
  • Coriander leaves few
  • Mint leaves 4 -5 chopped  
  • Pepper powder - 1/4 tsp
  • Asafoetida – a pinch  
  • Salt to taste
Preparation
  • Break the eggs and beat it well.
  • Heat the pan with oil/butter, add cumin, asafoetida,green chillies and curry leaves saute for few secs.
  • Now add onion and saute till transparent. Then add capsicum, sambar powder, salt, coriander and mint leaves and saute for 2 -3 min.
  • Now add the beaten egg, mix well and finally add pepper powders.
  • Mix well and cook on low flame for 2 mins. 
  • Capsicum egg podimas is ready to serve as a side dish for rice.
  • Serve as snacks for kids and paleo diet.
