Coconut Rice / Variety Rice Lunch Box Recipes


Ingredients  
  • Cooked rice -2 cups heaped
  • Fresh grated coconut -1 cup
  • Oil -1 tbsp
  • Mustard seeds –1 tsp
  • Cumin seeds –1/2 tsp (optional)
  • Channa dal  – 1/2 tbsp
  • Urad dal – 2 tsp
  • Small onion – 2 chopped (optional) 
  • Green chillies -2 slit 
  • Curry leaves – few  
  • Asafoetida – a pinch    
  • salt
Preparation 
  • Add a tsp of oil to the cooked rice and spread it on a plate to cool down.   
  • Now heat the pan with oil, add mustard seeds, cumin seeds after split, add channa dal, urad dal, Saute till the dal change golden color.
  • Add chillies, onion, asafoetida, curry leaves. Sauté for few sec.  
  • Finally, add grated coconut, salt and sauté for 2 minutes. Mix well and switch off the gas.
  • Now add the cooked rice and mix well 
  • Ready to serve south Indian special coconut rice with brinjal curry, potato fry, your choice…
