Lemon Rice/Lunch box ideas

Ingredients  
  • Cooked Rice -1 cup 
  • Sesame seed oil -3 tsp  
  • Lemon -1 (Squeeze juice)
  • Roasted Peanut – few (optional)
  • Small onion -3 chopped (optional) 
  • Mustard seeds -1 tsp
  • Green chillies -1
  • Turmeric Powder -1/4 tsp
  • Urad dal   -1 tsp
  • Channa dal -1 tsp
  • Red Chillies -2
  • Asafoetida -a pinch
  • Curry leaves – few
  • Coriander leaves – few
  • Salt 
Preparation 
  • Add a tsp of oil to the cooked rice and spread it on a plate to cool down.   
  • Now heat the pan with oil, add mustard seeds, after split, add channa dal, urad dal, Saute till the dal change golden color.
  • Add chillies, onion, asafoetida, curry leaves and turmeric powder. Saute for few sec. 
  • Now add the lemon juice and salt Mix well and switch off the gas.
  • Add the cooked rice and mix well.
  • Finally garnish with peanut and coriander leave.
  • Ready to serve South Indian Special Lemon Rice with potato fry, pickles of your choice.
