Ingredients
- Cooked rice -2 cups heaped
- Fresh grated coconut -1 cup
- Oil -1 tbsp
- Mustard seeds –1 tsp
- Cumin seeds –1/2 tsp (optional)
- Channa dal – 1/2 tbsp
- Urad dal – 2 tsp
- Small onion – 2 chopped (optional)
- Green chillies -2 slit
- Curry leaves – few
- Asafoetida – a pinch
- salt
Preparation
- Add a tsp of oil to the cooked rice and spread it on a plate to cool down.
- Now heat the pan with oil, add mustard seeds, cumin seeds after split, add channa dal, urad dal, Saute till the dal change golden color.
- Add chillies, onion, asafoetida, curry leaves. Sauté for few sec.
- Finally, add grated coconut, salt and sauté for 2 minutes. Mix well and switch off the gas.
- Now add the cooked rice and mix well
- Ready to serve south Indian special coconut rice with brinjal curry, potato fry, your choice…
