Ingredients
- Cooked rice - 1 cup
- Onion big - 2 chopped
- Garlic – 10 cloves chopped
- Cardamom -1 (optional)
- Bay leaf -1 (optional)
- Ripe tomatoes - 3 chopped
- Green chillies - 2 slit
- Red chilli - 1
- Turmeric powder -1/4 tsp
- Chilli Powder – 1/2 tsp
- Sugar – ½ tsp
- Coriander leaves - few finely chopped
- Salt
- Curry leaves - few
- Oil - 3 tbsp
- Cashew – 2 broken
- Mustard seed -1 tsp
Preparation
- Heat the pan with oil, add mustard seed after split add Cardamom,bay leaf, garlic, fry till golden colour and then add red chilli, green chilli and onion fry till colour change.
- Now add cashew saute for few sec and add tomatoes, turmeric powder, chilli powder, sugar and salt. Cook till tomatoes become mushy and raw smell goes off.
- Switch off the gas and add cooked rice, sprinkle some coriander leaves and mix well.
- Now ready to serve easy and quick lunch box recipe, tomato rice, variety rice.
