Ingredients
- Lady's finger/vendakkai- 1/2 kg
- Turmeric powder - a pinch
- Kashmiri chilli Powder – 2 tsp (adjust)
- Salt
For the seasoning
- Oil - 3 tbsp
- Mustard seeds - 1 tsp
- Channa dal - 1/2 tsp
- Curry leaves – few
- Red chilli - 1
Preparation
- Wash and wipe ladies finger well with a clean cloth. Then cut off the top and bottom, now cut it into small pieces and keep aside.
- Heat the pan with oil, add mustard, when it splits, add channa dal, red chilli and curry leaves, saute till dal turns light brown colour.
- Now add the lady's finger cover and cook in medium flame.
- After 5 mins, add turmeric powder, chilli powder and salt and cook till it changes colour. Mix very carefully, otherwise it gets smashed (sticky).
- Keep stirring it until gets crispy in low flame.
- Ready to serve South Indian special Vendakkai Poriyal with sambar, rasam and curd rice
