Vendakka fry / Bhindi Coconut Stir Fry

Ingredients
  • Vendekka / Bhindi – ½ kg
  • Shallots/ small onion – 10 - 15 chopped
  • Coconut – 5 tbsp
  • Red chilli powder – 2 tsp
  • Coriander powder – ½ tsp
  • Turmeric powder - ¼ tsp
  • Garam masala – 1 tsp
  • Green / red chilli – 3 slit
  • Mustard seeds - 1 tsp
  • Channa – 1 tsp
  • Curry leaves few
  • Oil - 2 tbsp
  • Salt to taste
Preparation


  • Wash and dry the bhindi (ladies finger/okra) and cut it into small pieces and keep aside.
  • Heat the pan with oil, add mustard after split, add channa wait till golden color.
  • Now add the chilli and saute for a sec then add the onion and cook till colour change.
  • Add the lady's finger cover and cook in medium flame.
  • After 5 mins, add turmeric powder, chilli powder, coriander powder and salt, cook till it changes colour. Mix very carefully, otherwise it gets smashed (sticky).
  • Keep stirring until it gets crispy in low flame.  Finally add the coconut, garam masala and mix well. Wait for a min and turn off.
