Ingredients:
- Eggs – 3
- Big Onion – 1 chopped
- Capsicum – ½ chopped
- Sambar powder - 1/2 tsp
- Oil/butter – 2tsp
- Green chilli – 1 chopped
- Cumin – 1 tsp
- Curry leaves few
- Coriander leaves few
- Mint leaves 4 -5 chopped
- Pepper powder - 1/4 tsp
- Asafoetida – a pinch
- Salt to taste
Preparation
- Break the eggs and beat it well.
- Heat the pan with oil/butter, add cumin, asafoetida,green chillies and curry leaves saute for few secs.
- Now add onion and saute till transparent. Then add capsicum, sambar powder, salt, coriander and mint leaves and saute for 2 -3 min.
- Now add the beaten egg, mix well and finally add pepper powders.
- Mix well and cook on low flame for 2 mins.
- Capsicum egg podimas is ready to serve as a side dish for rice.
- Serve as snacks for kids and paleo diet.
