Ingredients
- Ridge gourd-1 cup Chopped
- Tomatoes – 1 Chopped
- Coriander, mint leaves - a handful
- Onion- 1 Chopped
- Curry leaves few
- Cumin – 1 tsp
- Garlic -2 cloves
- Green chilli – 1
- Pepper corns – 3-5
- Coconut Oil - 2tsp
- Water – 1 cup
- Salt to taste
Preparation
- Heat the pan with water, add ridge gourd, leaves, chilli, pepper, salt, garlic, tomatoes, and onions. Allow to cook till soft.
- Drain the mixture and allow to cool. Keep the liquid aside.
- Add the mixture to mixer grinder and make it as smooth puree.
- Now heat the pan with oil, add mustard allow to split, few curry leaves saute and add the puree and the liquid which drain before, mix well. Allow to cook for 2 mins in low flame.
- Off the flame and sprinkle few coriander.
- Ready to serve Ridge gourd Soup - peerkangai soup.
